Mass spectrometry has always been an important tool in food safety and food quality analysis, but recent advances in sample preparation methodology, ionization techniques, and instrumentation have significantly expanded the range of applications. Contaminant and adulterant analysis, at one time focused on small molecules, now extends to large biomolecules such as protein allergens and toxins. Characterization of components, once limited to focused methods for narrow classes of compounds, now extends to fingerprinting complex mixtures. New ionization approaches promise to improve rapid screening capabilities, and techniques once limited to the laboratory can now be moved into field applications.
Mass spectrometry is rapidly assuming a major role in assuring food safety and food quality.
