Acetaldehyde and Formaldehyde Content in Foods
News Nov 09, 2015
The aim of this study was to develop an efficient quantitative method for the determination of acetaldehyde (AA) and formaldehyde (FA) contents in solid and liquid food matrices. The determination of those compounds was validated and performed using gas chromatography-mass spectrometry combined by solid phase micro-extraction after derivatization with O-(2,3,4,5,6-pentafluoro-benzyl)-hydroxylamine hydrochloride. Validation was carried out in terms of limit of detection, limit of quantitation, linearity, precision, and recovery. Then their contents were analyzed in various foodsamples including 15 fruits, 22 milk products, 31 alcohol-free beverages, and 13 alcoholic beverages. The highest contents of AA and FA were determined in a white wine (40,607.02 ng/g) and an instant coffee (1,522.46 ng/g), respectively.

Dark Chocolate Good For Mind and BodyNews
New research shows that consuming dark chocolate that has a high concentration of cacao has positive effects on stress levels, inflammation, mood, memory and immunity. While it is well known that cacao is a major source of flavonoids, this is the first time the effect has been studied in human subjects to determine how it can support cognitive, endocrine and cardiovascular health.READ MORE
Fossilized Algae Hold Promise for Improved Food Safety TestingNews
Researchers, exploiting thin-layer chromatography and surface-enhanced Raman scattering, have used fossilized remains of algae to take a key step toward being able to more sensitively detect harmful contaminants in food.READ MORE
The Genes That Make Quorn a Fungal Food FavoriteNews
The meat substitute Quorn is derived from a fungus called Fusarium venenatum. A very similar fungus, F. graminearum, is one of the world's most damaging crop diseases. A new genome study shows why one fungus makes food, and the other destroys it.READ MORE
