This protocol was developed in response to recent recalls of instant noodle products that were found to be adulterated with BaP. BaP is a polycyclic aromatic hydrocarbon (PAH) that is listed as a Group 1 carcinogen by the International Agency for Research on Cancer, an intergovernmental agency part of the World Health Organization. The compound can be generated by the incomplete combustion of oil at high temperatures and can be found in fried, barbecued, smoked and overcooked food.
