Improving Complex Phosphopeptide Characterization

Phosphorylation of the casein proteins in milk is required to facilitate the adsorption of these nutrients in the gut of a nursing infant.

Characterizing phosphorylation sites on casein proteins is inherently difficult due to the presence of peptides with highly variable levels of phosphorylation. However, using a hybrid electron-activated dissociation (EAD) and collision-induced dissociation (CID) fragmentation approach can improve the sequence coverage for casein peptides and post-translational modification (PTM) characterization.
