The Endocrine System and Food Safety
The endocrine system consists of glands and organs that produce hormones to regulate our body and its functions. Substances that behave like hormones are called endocrine active substances. If present in food, these substances can interact directly or in-directly with the body's endocrine system. Such 'endocrine activity' is one of several effects which scientists consider when they assess possible risks to consumers from chemicals in food. One of EFSA's toxicologists explains.
